Assens er en gammel søfartsby grundlagt i 1200 tallet. Et travlt liv gennem århundreder præger stadig gademiljøet og husene i den gamle by.
Assens nævnes første gang i 1231 i kong Valdemars jordebog og har siden middelalderen været overfartssted på den gamle rute mellem København og Hamborg. Kvæg, post og varer blev via søkøbstaden i Lillebælts Hjerte bragt til Sønderjylland.
Efterhånden udviklede byen sig, og i 1524 opnåede byen købstadsrettigheder givet af kong Frederik 1. Få år senere blev byen stort set jævnet med jorden under Grevens fejde og plyndret af kong Christian 3.’s tropper efter slaget ved Øksnebjerg. Den ringmur, som byen oprindeligt var omgivet af, blev herefter revet ned.
Under Christian 4. blev byen igen befæstet, nu med volde og grave, men under svenskekrigene blev byen endnu en gang stormet og plyndret, denne gang i 1658 af svenske tropper, der i den strenge vinter gik over isen på Lillebælt fra Jylland.

Assens var fra Middelalderen det primære overfartssted til Slesvig og derved knudepunkt for trafikken mellem København og Hamborg. Et levn fra den tid, hvor byen var en betydende færgeby, er Assens kgl. poststationsgård Postgården fra 1704. Den er nu Fultonstiftelsens søfartsskole.

Grevens Fejde foregik i 1500-tallet i Danmarks senmiddelalder. Senmiddelalderen var præget af opbrud og uroligheder i store dele af Europa og ikke mindst i Nordeuropa.
Under Grevens Fejde (1534-1536) lagde Faurskov og Øksnebjerg jorde til 2 store slag på Sydvestfyn. Grevens Fejde betragtes som Danmarks hidtil sidste borgerkrig. Grevens Fejde var ikke en ren borgerkrig, idet udenlandske magter spillede en væsentlig rolle for både dens udbrud, forløb og resultat. Begge steder er der opsat mindesten og er et besøg værd.
